Canning Mock Spaghetti Oh’s

Canning spaghetti ring pasta was a staple in my childhood. Now, as an adult, they aren’t anywhere near as good as I remember. I also really don’t love the ingredients. Of searching and developing I went because as your resident rebel canner, I’m comfortable with canning pasta.

I gotta stop here and mention that this recipe is considered rebel canning. Both the canning of pasta and the tomato soup recipe I am sharing are unapproved ingredients. It is not suggested to can them by the canning powers that be. This does not mean it is illegal or unsafe. I encourage you to do your own research and have a good understanding of safe canning practices before entering rebel canning land. If you are not comfortable with this, please do not can it, plain and simple. I am simply sharing a recipe I use in my own kitchen. This does not mean you have to do it and I also cannot control what you do in your own kitchen or be liable for any mishaps. Use common sense.

Now. Where were we. Oh yeah. Here’s the tomato soup recipe I can that I use for the tomato part of my canned spaghetti o’s. It is phenomenal and so so so delicious. I can 4-5 pints of mock spaghetti oh’s at a time so I don’t tie up a bunch of jars in a quick meal I don’t reach for a ton. Start by heating up your canned tomato soup to a simmer. I plan on 1 quart of soup per 2 pints I can and have a little leftover for lunch. I could eat tomato soup every day of my life.

While the tomato soup is heating up, add pasta and seasonings to each jar. This recipe is a per pint jar measurement. Ladle hot tomato soup over pasta and seasonings, add lids and bands, shake well, and pressure can for 10 minutes at you elevations recommended weight.

When you’re ready to eat, simply dump, heat, and eat! So so so good. And its even better if you can some meatballs in pints and mix the two together for an even more hearty lunch. Because who can be mad about meatballs! Enjoy!
