Let’s can Orange Glazed Carrots!

My best friend had recently canned these carrots and shared the recipe with me. I was skeptical because I’ve never had nor made glazed carrots before, so I told her to get back to me once she tasted them. She reported they were wonderful warmed up with some butter, so I was easily convinced. As two besties who like to cook and eat good food, I always trust her opinion. I had some leftover carrots from my previous canning class and figured I’d do a test batch!

AND OH MY GOSH, they are so good! My daughter and I sat and ate an entire quart in one fell swoop.

I have, of course, tailored it to my lazy girl method of refusing to make a syrup on the stove top, and rather make the syrup/glaze right in the jar. I did make my first batch by making the glaze on the stovetop just to compare the results of that to my lazy girl method, and they were exactly the same. Since I had not made it before, I had to make sure I wasn’t ruining it :D. Do make sure you use hot tap water or water you have brought to boiling or almost boiling to help the brown sugar dissolve better and not form a crusty layer at the bottom of your jar and give it a good shake before you add to the canner. I also added some salt to each jar in my second batch, because the first batch I did was missing it. I’m also thinking of adding a little rosemary to one to see how that tastes!

I pressure canned these for carrot times. So, safe to say this really isn’t a rebel recipe. Just canning carrots with some goodies added in. That’s not illegal!
