Let’s make Dandelion Lemonade!!

Dandelions are comin’ in hot with all the sunshine here in Ohio and I’m loving it. They are one of my favorite herbs and one of the most misunderstood. You should really look into the wide array of health and nutritional benefits of this “yard weed” that alot of folks for some reason don’t love…. it blows my mind people actually spray their yards to kill them or mow their yards constantly so they don’t show. They are so beautiful and so useful! Stahhhhhhhp.

Today we’re going to make lemonade with them. I have found making anything with dandelion flowers leans toward a slight honey flavor and I’m not mad about it.

The Recipe

2 cups tightly packed dandelion flowers

4 cups water

up to 1/2 cup honey, maple syrup, sugar, sweetener of choice

1 cup lemon juice OR juice of 8 lemons (fresh is always superior)

Instructions

  1. Rinse and drain dandelion flowers.

  2. Bring 4 cups water to a boil. Shut off heat & add flowers. Cover and allow to steep 20-30 minutes or allow to cool entirely and refrigerate overnight. (overnight is my favorite because I feel like it gives the best and most flavor but the quick steep works great too if you can’t wait that long.)

  3. Strain dandelions off and add liquid to a 1/2 gallon mason jar.

  4. Add in sweetener of choice, to taste, and lemon juice.

  5. Chill & enjoy!
